  1. Lavamos la verdura y cortamos en trocitos pequeños. Picamos el ajo muy finito y se lo incorporamos a la verdura.
  2. En una cazuela ponemos unas 3 cucharadas de aceite y sofreímos la verdura previamente sazonada con sal, cuándo estén casi hechas, añadir las pasas, comino, jengibre y canela y rehogar unos minutos más....reservar.
  3. En un cazo ponemos el agua, la pastilla de caldo y un poco de sal. Cuando empiece a hervir probar de sal, rectificar si hiciera falta a gusto de cada uno y retirar del fuego. Añadimos el cous cous y lo dejamos que se hidrate durante unos 3 minutos con el cazo tapado.
  4. Pasados los 3 minutos añadimos un chorreón de aceite y removemos unos segundos al fuego para que no se apelmace el cous cous y queden los granos sueltos.
  5. Añadir el sofrito de verduras al cous cous y remover hasta que estén bien mezclados todos los ingredientes....Emplatar.
