Para que sirva de preámbulo, la alboronia es uno de los platos más deliciosos que nos ha dejado el legado Andalusi, la palabra alboronia viene del vocablo árabe " Al Baraniyya ", que significa cierto manjar. Los ingredientes que se empleaban en este guiso eran berenjenas, ajo, cebolla, calabaza y frutos secos triturados como nueces, almendras o avellanas. Con el descubrimiento de América llegaron nuevos productos como el tomate y el pimiento, y de este el pimentón, estos se empezaron a añadir a la receta y con el paso de los años empezó a llamarse al guiso " Pisto Andaluz ". - 3 berenjenas
- 3 dientes ajo
- 500 gr calabaza
- 1 cebolla grande
- Sal y pimienta

- Lavamos, pelamos y cortamos la berenjena en trozos regulares.
- Las vamos a cocinar al vapor. En la parte inferior de la cuscusera, se pone agua para hervir con limón, para aromatizar las berenjenas. Llevamos a ebullición. Ponemos las berenjenas troceadas en la parte superior de la cuscusera, y cuando el agua comience a hervir colocamos la parte superior de la cuscusera encima de la parte inferior. Cubrimos con un paño limpio o tapamos con su tapadera.
- Cuando las berenjenas ya están cocidas y se han enfriado un poco, desmenuzamos la pulpa de las berenjenas con un tenedor. Pelamos la calabaza, la troceamos y la ponemos a hervir en una cazuela con agua hasta que ablande. Reservamos.
- Picamos la cebolla y la sofreímos en una cazuela. Pelamos y picamos los ajos en trocitos pequeños. Reservamos.
- Cuando la cebolla esté dorada, apartamos la cazuela del fuego, añadimos un chorreón de vinagre, la berenjena desmenuzada, la calabaza cocida en dados, pimienta negra molida, los ajos picaditos, la sal, dos cucharaditas de comino molido, aceite de oliva virgen extra, mezclamos todo muy bien. Y para decorar, añadimos unas nueces y almendras picadas y espolvoreamos con cilantro fresco picado. Buen Provecho.
