- Limpiar el cherne y dejar los lomos limpios sin espinas, racionar y reservar.
- Cortar en julianas el ajo, cebolla, pimiento rojo y el tomate; rehogarlos en un caldero con aceite de oliva virgen por ese orden. Una vez bien rehogado, introducir al guiso el perejil, cilantro y la pimienta palmera; todo ello cortado en brunoisse. Después de 15 minutos introducir el caldo de pescado y laurel. Dejar guisar unos minutos más. Apagar el fuego y añadir la almendra tostada.
- RAVIOLI ENCEBOLLADO: Cocinar la pasta wonton en agua hirviendo durante unos 45 segundos. Enfriar rápidamente en agua fría. Disponer la pasta estirada entre papeles para horno o para que se seque y conservar en el frigorífico. Rellenar la pasta wonton cocinada con el encebollado.
- CALABAZA ASADA: Cortar la calabaza, pelarla y asarla al horno durante unos 20 minutos a 180 ºC. Secar al horno las aceitunas negras sin hueso, triturar y mezclar con el aceite de oliva virgen. Cortar la calabaza en lingotes y embarrarlas en el aceite de aceitunas negras.
- CHIP DE BATATA: Laminar la batata pelada y freír en abundante aceite a 150 ºC poco a poco. Escurrir y poner entre papeles absorbentes para escurrir.
- Presentación: Poner la calabaza asada en un plato, luego el cherne cocinado a la plancha; encima de este el ravioli de cherne. Por último; decorar con los chips de batata y los brotes.
