Hola aquí tenéis la receta de magdalenas de trigo sarraceno y veganas, que estuve ensayando para el taller del colegio de mi hijo. Pues como indicaba en la receta de otras magdalenas he estado probando recetas de este estilo, el azúcar, puede ser de caña, de coco, agave, miel; lo dejo a elección del consumidor. Yo le pongo menos azúcar de la que indico en la receta, porque el plátano ya endulza.
El aceite, también podéis elegir de oliva, de girasol, de coco.
Y nada a disfrutarlas, me gustan estas recetas porque así, alternamos los trigos, los cereales y al no ser siempre el mismo podemos disfrutar de todos ellos sin que el organismo se sature.

- 600 gr. plátanos (calabaza, boniato)
- 260 gr. trigo sarraceno
- 20 gr. harina de algarroba
- 140 de azúcar
- 120 de aceite de oliva

- 1 sobre levadura en polvo sin gluten
- 4 c. c. de canela en polvo

- Precalentamos el horno 200ºC
- Lo primero que yo hago es lavar el trigo sarraceno, lo tuesto un poquito y lo trituro, hago esto porque cuando uso la harina de trigo sarraceno comprada no me queda tan rico, me quedan demasiado compactas, y tras varias pruebas como mejor queda es así y molerlo pero que no quede muy molido algo entero, entonces estarán crujientes
- Machacamos los plátanos y si es calabaza la rallamos o trituramos
- Echamos el trigo sarraceno, la harina de algarroba, el azúcar, aceite de oliva, la canela, la levadura y mezclamos, hasta obtener una masa
- Echamos lo frutos secos y mezclamos de nuevo
- Echamos en los moldes
- Horneamos durante 30´ aprox. a 180ºC
